I spent my high school years working at a pizza parlor. During that time, I learned some great techniques and awesome recipes from my mexican coworkers. Among those recipes were the candied pumpkin. Basically, you bake a sugar filled pumpkin ontil the fruit flesh becomes translucent and drunk on sugar. Here is what you need.
1 Medium sized pumpkin
Sugar, and lots of it. At least a five gallon bag
1)Preheat oven to 350.
2)Empty out pumkin, just like you would to carve it. Remove seeds and ‘brains’
3)Fill with sugar, at least halfway.
4)Add one of the optional ingredients
5)Put in oven, and let bake until innards are translucent. 3-5 hrs. Without the ‘lid’
This is good to do around Halloween. You get two end products from this, a candied fruit and a delicious simple syrup you can use to flavor your coffee or lattes. I once used the syrup until the following halloween.
