I saw artichokes on sale the other day at Jewel while picking up bbq supplies. I began to wonder if I could grill one. I immediately found an awesome website, Cooking for Engineers, and their analytical recipe for this. They have amazing pictures, information and tips on the process. However, I couldn’t do this because I was at a friends house for a BBQ. I wasn’t going to impose my experiment on their kitchen(boiling the artichoke), and really wished I could just put the artichoke on the grill and wait. I decided to experiment later on at my place.
I split and prepped the artichoke. One half was destined for the boil treatment, the other for an extended stay on the grill. I kept the grill-only half on there for maybe 30-40 minutes and it was not very edible. So, the bottom line is, you should boil your artichoke halves for 15 minutes first, then grill them.
I’m convinced that there is a way to grill these guys, maybe leave them on a top rack for an hour or so while focusing on entree meats? I plan on experimenting with them and I will write with my findings.
